Teaspoon Willie's Phenomenal Spicy Chili
This recipe produces very spicy and phenomenally flavorful chili. Increase heat by adding more Teaspoon Willie’s Spicy Sauce or hotter peppers. Alternately, you can tone down the spice by omiting one hatch chili or using Teaspoon Willie's Everything Sauce instead.

Ingredients:
- 1 ½ lb ground beef or bison (optional, use 1/3 cup of vegetable oil for vegetarian)
- 1 large yellow onion, chopped
- 1 bell pepper, chopped
- 1 poblano pepper
- 2 hatch chilis, medium-heat
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 can black beans
- 1 can pinto beans
- 1 can navy beans
- 6 tbsp vegetable or avocado oil
- ½ cup fresh parsley, minced
- ½ cup fresh cilantro, minced
- 6 garlic cloves, minced
- 2 cups TEASPOON WILLIE'S SPICY SAUCE
- 4 cups all-natural tomato sauce
- 2 cups of vegetable stock
- 1 can of tomato paste
- 1 cup shredded cheddar cheese (optional)
- 1 cup sour cream (optional)
Instructions:
- To char the poblano and hatch chilis: turn on grill or broiler to high heat. Thoroughly coat the chilis with 3-4 tbsp olive oil and 1 tsp salt. Cook the chilis on the grill or broiler until skin begins to blacken. Let the chilis cool then dice, making sure to keep the burnt chili skin, which gives great flavor to the chili.
- Heat 3 tbsp olive oil in a heavy-bottom pot on medium-high heat.
- Add chopped vegetables, parsley, garlic, cilantro, salt and pepper and saute for 3-4 minutes.
- Next add ground beef/buffalo and the charred and diced pablano and hatch chilies. Saute for 3-4 minutes and use a spoon to break up the ground meat.
- Add tomato sauce, tomato paste and 2 cups of TEASPOON WILLIE'S SPICY SAUCE
- Drain the beans of their liquid and add to the pot as well. Turn the heat down to low-medium and let the chili simmer for 2-3 hours, occasionally stirring the contents. Add additional salt to taste.
- Top chili with shredded cheese, sour cream and/or your own fixin's ... and Enjoy!
