Teaspoon Willie's Butternut Squash Soup

Ingredients:
- 4 slices of thick cut bacon (optional, use 1/3 cup of vegetable oil for vegetarian)
- 2 onions, chopped
- 4 garlic cloves, minced
- 1 granny smith apple, peeled, cored and chopped
- ¼ cup brown sugar
- 2 lb butternut squash, peeled and cut into 1 inch cubes
- 4 cups vegetable broth
- 1 ½ cups TEASPOON WILLIE'S EVERYTHING SAUCE
- salt and pepper to taste
Instructions:
- In a large, heavy-bottom pot, cook bacon until just crispy. Remove bacon, leaving bacon fat in the pot.
- Sauté onions in bacon fat until just soft, add apples and sauté for two minutes.
- Add garlic and cook until garlic is golden, about 1 minute.
- Stir in brown sugar, butternut squash cubes, broth and TEASPOON WILLIE'S EVERYTHING SAUCE.
- Boil, uncovered, until squash is tender, about 15-20 minutes.
- Working in batches (or using a stick blender) blend soup until smooth.
- Dish up the soup and top with a sprinkle of chopped bacon and a drizzle of TEASPOON WILLIE'S EVERYTHING SAUCE. Enjoy!
